Thyme beef mince with bell peppers and mushrooms

Lately, I have been cooking minced meat with tomato sauce quite a bit. I usually accompany it with pasta but I can use it for taco nights too. Minced meat has been an old time favorite for me since this was the food my mother used to make very often while I was growing up.

That is why, it’s one of the first recipes I learnt to make and I twisted it to suit my taste. I have added mushrooms, which I really love and I season it with dried thyme. I also use bell peppers to give it more character but many people find them overpowering so you can leave them out and make your own combination.


Let’s get straight to the recipe.


Thyme beef mince with bell peppers and mushrooms

makes 5-6 servings



500gr beef minced meat

1 tablespoon tomato paste

2 large tomatoes

2 cloves of garlic

1 medium sized white onion chopped

1 green bell pepper chopped

100 gr of mushrooms (pick your kind. I chose brown agaricus for this recipe)

1 pinch of brown sugar

3 tablespoons olive oil

5 teaspoons dried thyme




1. Over medium to high heat, in a large pan pour the olive oil. Add the onion, garlic, mushrooms and brown sugar together. Let them brown for 3-5 minutes. Add the tomato paste too.

2. Over medium heat add the bell pepper, the two large tomatoes blended and the dried thyme.

3. Cook for another 15 minutes until the liquid has been reduced to a minimum. Remove from fire and let it cool down. Serve with pasta or use it as taco filling.
